Meringues have always been one of my favorite sweet treats. And because I make a lot of Butterscotch Pot de Crème, Chocolate Pot de Crème and Lemon Tarts I often end up with lots of extra egg white because all of those recipes call for egg yolks only. Conversely, if you were started with Meringues and had a lot of yolks left over you could make any of those three delicious recipes. It’s always nice to have a variety of sweets on a dessert table anyway.
